Walnut and Sesame-Crusted Salmon

INGREDIENTS
4 slices of wild-caught salmon
1 cup walnuts
1/2 cup sesame seeds (black and white)
2 tablespoons Dijon mustard
4 tablespoons olive oil
Salt and pepper to taste
1 tablespoon coconut sugar syrup
INSTRUCTIONS
- Preheat the oven to 400°F.
- Line a baking sheet with parchment paper.
- Rinse the salmon and pat it dry with a paper towel.
- Place the salmon skin-side down on the parchment paper.
- In a food processor, combine walnuts, sesame seeds, salt, and pepper. Pulse until the walnuts are crumbled, but not too fine, to maintain a nutty crunch. Set aside.
- Evenly spread the Dijon mustard over the salmon.
- Sprinkle the walnut mixture on top of the mustard and drizzle with olive oil and coconut syrup.
- Bake in the oven for 10-25 minutes, depending on the thickness of your salmon.
