INGREDIENTS
4 slices of wild-caught salmon
1 cup walnuts
1/2 cup sesame seeds (black and white)
2 tablespoons Dijon mustard
4 tablespoons olive oil
Salt and pepper to taste
1 tablespoon coconut sugar syrup

INSTRUCTIONS

  1. Preheat the oven to 400°F.
  2. Line a baking sheet with parchment paper.
  3. Rinse the salmon and pat it dry with a paper towel.
  4. Place the salmon skin-side down on the parchment paper.
  5. In a food processor, combine walnuts, sesame seeds, salt, and pepper. Pulse until the walnuts are crumbled, but not too fine, to maintain a nutty crunch. Set aside.
  6. Evenly spread the Dijon mustard over the salmon.
  7. Sprinkle the walnut mixture on top of the mustard and drizzle with olive oil and coconut syrup.
  8. Bake in the oven for 10-25 minutes, depending on the thickness of your salmon.
  9. Serve and enjoy. Goes well with the Roasted Carrots and Fennel Fall Warm Salad.
