Whole Roasted Branzino with Roasted Rosemary Potatoes

I’m starting a new series over on @shaynateresetaylor where I show you my easiest meals and how I put them together. For today’s dinner, I roasted a whole branzino and paired it with delicious roasted rosemary potatoes. While this meal might look advanced, it really couldn’t be easier! It’s the perfect dish to impress for date night, family dinner or holiday dinner parties and really takes no time at all. Enjoy x

Ingredients

  • 1 whole Branzino
  • 1 lemon
  • Salt and pepper to taste
  • 4-5 thyme sprigs
  • 2 potatoes
  • 3 garlic cloves
  • 1 medium rosemary sprig
  • Olive oil

Instructions

  1. Preheat oven to 450°F.
  2. Rinse your branzino fish well and pat dry with a paper towel. Rub with olive oil, salt and pepper. Add in lemon slices to the inside of the branzino as well as the garlic and thyme sprigs.
  3. Put your potatoes onto a baking tray add a few tbsp of olive oil, as well as the salt, pepper, garlic, and rosemary. Toss to combine.
  4. Add both to oven and roast for 20 to 25 minutes, depending on the size of your branzino. You’ll want to check the potatoes and turn a few times as they may finish before the fish, depending on the size of the chopped pieces.
