Seasonal, Gut-Healthy Italian Recipes: Online Cooking Class With Holistic Chef Shayna Terese Taylor

Have you ever wanted to cook like an Italian chef? Italian cuisine is known around the world for pasta, pizza, and cheese, but beyond these classics, there is an entire menu of authentic Italian dishes that will transform the way you eat and enjoy food.

Although it’s called the Mediterranean “diet”, food in Italy is not a strict diet—it’s a healthy, balanced lifestyle that blends pleasure with nourishment.

The best part? You don’t need a passport to experience the joy of Italian food. The secret to Italian cooking is fresh, seasonal ingredients. Rooted in sacred tradition, every dish follows the wisdom of nature—what’s in season is what’s on the menu.

Meet Your Chef Instructor

I’m Shayna Terese Taylor – founder of Shayna’s Kitchen, organic chef, and holistic nutritionist focused on gut health. To me, food is about enjoying every bite while nourishing your body with fresh, highly quality ingredients. It’s about intentional, daily habits that fuel your body, support your lifestyle, and help you thrive and feel your best.

I live in Italy and have my own biodynamic farm in Umbria where we cultivate thousands of centuries-old olive trees in ancient, nutrient-rich soil. Our olives are harvested and cold-pressed into organic, extra virgin, single estate olive oil, rich in polyphenols, antioxidants, and nutrients including monounsaturated fats, oleocanthal, oleuropein, squalene, and vitamins E & K.

As a culinary artisan, my recipes are gluten-free, refined sugar-free, corn-free, and seed-oil-free, made with real ingredients that support optimal gut health, energy, and overall well-being. Whether you’re a beginner or pro, you’ll love cooking these deeply nourishing and deliciously satisfying recipes with me.

Seasonal, Whole Foods For Health & Sustainability

If you’ve ever tasted Italian olive oil or wine, you know that Italians set the gold standard for excellence and are truly passionate about flavor. Cooking seasonally is a culinary tradition that uses ingredients only at their ripest, juiciest, and most vibrant time of year.

Our full class recording includes a printable shopping list and kitchen essentials guide, as we’ll be making everything from scratch. Each recipe is a thoughtfully crafted meal of healing, in-season ingredients. Nothing canned, pre-packaged, or processed is used. Here’s why whole, seasonal food is not only more delicious but also better for your health and our environment:

Nutrient Density & Longevity

  • Eating in-season produce means nourishing your body with the best nature has to offer at the right time. Organic plants, vegetables, and fruits are highest in vitamins, minerals, and antioxidants when they are harvested in season.
  • People in Blue Zones, regions with longest-living populations, eat seasonal food grown in their own gardens and local farms. Eating farm-fresh, seasonal food naturally supports your digestion, energy, and overall well-being.

Gut Health

  • Whole, unprocessed foods contain natural enzymes and fiber, which is what keeps our gut thriving, our digestion smooth, and our bodies in balance. Fiber feeds the gut microbiome, supports detoxification, and helps prevent the chronic diseases we see rising today.
  • Eating seasonally aligns with biodynamic farming practices of organic food production in harmony with nature’s rhythms. While industrial agriculture often relies on chemicals that can deplete soil of its biodiversity, microorganisms, and nutrients, biodynamic farming enriches the soil, growing nutrient-rich food that promotes microbiome balance and diversity for optimal digestion, immunity, mental health, and hormonal balance.

Organic Health

  • Synthetic fertilizers, pesticides, and artificial ripening techniques are often used to grow produce at scale outside of their natural seasons. At farmer’s markets or local farms, you are more likely to find seasonal, organic, and more nutritious food grown sustainably by people who have a genuine love and connection to the land.
  • Instead of relying on conventional agriculture and artificial ripening methods, Italians follow the ancestral wisdom of eating with the seasons, reflecting Italy’s longstanding commitment to organic agriculture.

Holistic Sustainability

  • As a regenerative form of organic farming, biodynamic farming preserves natural ecosystems. Produce is grown in season and cultivated to flourish naturally without the use of chemicals or external inputs while conserving water and energy.
  • Eating regeneratively supports local farms. Respecting nature’s cycles, crop rotation, cover cropping, composting, and natural pest control support biodiversity and soil fertility. Improving soil health promotes carbon sequestration and environmental sustainability.
