Now you guys, this one is surprisingly one of my favorites! Just because it’s green doesn’t mean it has to taste bad 🙂 This soup is super nourishing for the stomach and for your digestive track. Enjoy!
IngredientsÂ
- 2 cups broccoli florets
- 2 celery stalks, Finley chopped
- 1 sweet onion, finely choppedÂ
- 2 garlic cloves, crushed
- 1 cup Kale, finely chopped
- 1 cup Spinach, finely chopped
- 1/2 cup beet greens finely chopped
- 1 parsnip, peeled and finely chopped
- 1 carrot, peeled and finely choppedÂ
- 3 cups homemade gut healing vegetable broth, or purified waterÂ
- Celtic salt to tasteÂ
- 1/2 lemon, juiced
- 1 teaspoon argan oil or coconut oilÂ
- 1 tablespoon chia seedsÂ
- toasted mixed seed and nutsÂ
DirectionsÂ
- In a soup pot, heat the argan or coconut oil, add in onion is cooked on medium-low until they start to caramelize. (about 15 min) add garlic, carrot, parsnip, celery, and broccoli. Cook over low leat for 5 min, stirring frequently.
- Add the vegetable broth or filtered water, bring to a boil, then cover the pot with a lid and let simmer for 5-7 min, until the vegetables are tender and not mushy.Â
- Stir in the greens, the transfer into the blender, add the chia seeds and the lemon, and process to obtain a smooth cream.Â
- Top with toasted seeds and serve.Â
