Super Green Soup – Trust Me Its Delicious

 

Now you guys, this one is surprisingly one of my favorites! Just because it’s green doesn’t mean it has to taste bad 🙂 This soup is super nourishing for the stomach and for your digestive track. Enjoy!

Ingredients 

  • 2 cups broccoli florets
  • 2 celery stalks, Finley chopped
  • 1 sweet onion, finely chopped 
  • 2 garlic cloves, crushed
  • 1 cup Kale, finely chopped
  • 1 cup Spinach, finely chopped
  • 1/2 cup beet greens finely chopped
  • 1 parsnip, peeled and finely chopped
  • 1 carrot, peeled and finely chopped 
  • 3 cups homemade gut healing vegetable broth, or purified water 
  • Celtic salt to taste 
  • 1/2 lemon, juiced
  • 1 teaspoon argan oil or coconut oil 
  • 1 tablespoon chia seeds 
  • toasted mixed seed and nuts 

Directions 

  1. In a soup pot, heat the argan or coconut oil, add in onion is cooked on medium-low until they start to caramelize. (about 15 min) add garlic, carrot, parsnip, celery, and broccoli. Cook over low leat for 5 min, stirring frequently.
  2. Add the vegetable broth or filtered water, bring to a boil, then cover the pot with a lid and let simmer for 5-7 min, until the vegetables are tender and not mushy. 
  3. Stir in the greens, the transfer into the blender, add the chia seeds and the lemon, and process to obtain a smooth cream. 
  4. Top with toasted seeds and serve.
