Sweet Candied Nuts

Chestnuts roasting on an open fire…. just kidding! Not quite time for that but do you know what it IS time for?! Sweet, toasted candied nuts. I love making big batches of these nuts for easy snacking throughout the week or for garnishing large dishes and salads. They’re crunchy, sweet, salty and trust me… it’s hard to stop at just one handful. Enjoy 🙂

Sweet Candied Nuts

Chestnuts roasting on an open fire…. just kidding! Not quite time for that but do you know what it IS time for?! Sweet, toasted candied nuts. I love making big batches of these nuts for easy snacking throughout the week or for garnishing large dishes and salads. They’re crunchy, sweet, salty and trust me… it’s hard to stop at just one handful. Enjoy 🙂

Ingredients
  

  • 2 cups almonds
  • 2 tbsp coconut oil melted
  • 1/4 cup coconut sugar
  • 1 tbsp cinnamon
  • 1 large pinch of salt

Instructions
 

  • Soak your nuts in water overnight. In the morning, rinse well and let dry over a paper towel.
  • Preheat over to 325F.
  • Melt coconut oil in a bowl, mix in coconut sugar, cinnamon and salt. Toss nuts in the mixture and spread evenly over a parchment-lined baking sheet.
  • Bake on 325 for 45 minutes, stirring occasionally.
