Vegan Fall Pizza with Squash, Mushrooms, and Roasted Broccolini


  • Pizza dough enough for one pizza— see my recipe on my website
  • Red pizza sauce
  • 1 clove garlic minced
  • 1/2 cup mushrooms sautéed
  • 1/2 cup cooked broccolini
  • 1/2 cup roasted squash I used acorn, butternut and honeynut
  • Celtic salt to taste
  • 1 tbsp olive oil


  • Precook your vegetables. For this recipe, I roasted squash and broccolini and sautéed my mushrooms ahead of time.
  • Preheat oven to 475F. Prepare your pizza dough, I used my gluten-free crust recipe on shaynas
  • Spread olive oil on a pizza pan, pizza stone or regular pan. Spread the dough until it forms a circle and reaches your desired thickness. Brush with olive oil.
  • Bake the crust for 3-4 minutes and remove from oven.
  • Spread tomato sauce, garlic, mushrooms, broccolini, squash, and salt on the pizza crust. Drizzle with olive oil.
  • Bake for 4-5 minutes and then raise oven temperature to Broil. Broil for an additional minute or two or until cooked through and golden brown on the edges.
