Caramelized Onion, Brussel Sprout, and Burrata Toast
Ingredients
- 1/2 cup hazelnuts
- 6 oz bacon or pancetta
- 1 onion chopped
- 1 lb brussel sprouts shaved
- 1 tbsp lemon juice
- 3 tbsp flat leaf parsley chopped
- 1 tsp lemon zest
- Salt and pepper to taste
- 4 slices gluten free bread
- 2 balls burrata cheese
Instructions
- Preheat oven to 400F. Toast the hazelnuts until golden brown, about 8 minutes. Set aside to cool.
- In a skillet over medium heat, add the bacon and cook until crisp. Prepare a plate with a paper towel and place the cooked bacon on it to cool.
- In the bacon fat, add the chopped onion and cook for 6-8 minutes or until fragrant and caramelized. Add the shaved brussel sprouts and cook for 6-8 minutes until tender. Add in the lemon juice and zest. Season with salt and pepper and stir. Remove from heat and let cool slightly.
- Toast your bread. Spread the burrata on top evenly over the 4 slices. Top with the cooked brussel sprout and onion mixture. Crumble your bacon pieces on top of the toast. Add the roasted hazelnuts and drizzle with honey. Finish with a little more lemon zest.
