The Best Grain-Free Granola

1 cup whole buckwheat
1 cup almonds (sprouted)
1 cup hazelnuts (sprouted)
1 cup pecans
1/2 cup pumpkin seeds
1/2 cup shredded coconut flakes
1/2 cup hemp seeds
1/2 cup chia seeds
1/2 cup sesame seeds
1 tbsp alcohol-free vanilla extract
1/8 tsp cinnamon powder
1/4 cup maple syrup or honey
1 cup almond butter
1/4 cup olive oil (such as @shaynas.kitchen)
1/2 tbsp Celtic salt
Preheat Oven:

Preheat your oven to 325°F (163°C).
Prepare Dry Ingredients:

In a food processor, add the buckwheat, almonds, hazelnuts, pecans, and shredded coconut. Pulse until combined but still chunky. Transfer to a large mixing bowl.
Add the pumpkin seeds, hemp seeds, chia seeds, sesame seeds, vanilla extract, and cinnamon powder to the bowl. Mix well.
Prepare Wet Ingredients:

In a saucepan over medium heat, combine the almond butter, maple syrup (or honey), olive oil, and salt. Stir until melted and well combined. Remove from heat.
Combine Mixtures:

Pour the melted mixture into the bowl with the dry ingredients. Mix thoroughly to ensure everything is evenly coated.
Bake Granola:

Line a rimmed baking sheet with parchment paper. Spread the granola mixture evenly on the sheet.
Bake for 15-20 minutes, or until golden brown. Toss the granola twice during baking to prevent burning.
Cool and Store:

After baking, turn off the oven and let the granola sit inside to become crunchier, or remove it from the oven and let it cool completely.
Store the cooled granola in a sealed container in your pantry for up to 2 weeks.
Serving Suggestions
Enjoy the granola with your favorite yogurt or as a cereal.
