Shayna’s Kitchen is excited to bring you EU Certified Organic Ancient Italian Olive Oil, cold-pressed from the sun-kissed ancient olive groves of my very own Umbrian farm, nestled in the green heart of Italy.

Each bottle is the harmonious blend of my Californian roots as a chef and the centuries of history of land that is home to my Italian farmhouse. The Golden History of Umbrian Olive Oil

Umbria is often referred to as the land of “green gold,” steeped in the rich legacy of olive oil. Long before this golden elixir became the global kitchen staple it is today, olive oil was an essential ingredient in the diet that sustained Mediterranean civilizations.

When human biologist Ancel Keys found that people of the Mediterranean lived longer than Americans, even alongside war and famine, the minimally processed, plant-based ethos of the Mediterranean diet rose to prominence. Today, the Mediterranean diet is championed by medical professionals worldwide as one of the healthiest diets on earth, linked to the lowering of risk of cardiovascular disease, stroke, cancer, Parkinson’s, Alzheimer’s, type 2 diabetes, and rheumatoid arthritis.

In one study, over a period of 12 years, women who most closely followed a Mediterranean diet had a 25% reduced risk of four cardiovascular events, including heart attack and stroke, compared to women whose diet least resembled a Mediterranean diet. — Harvard Health Publishing | Harvard Medical School

Cold-Pressed Extra Virgin Single Estate Olive Oil

The choices we make with food directly affect the well-being of our bodies and of our planet. If you’ve ever looked at the ingredients list of processed food or watched a documentary on American food and agriculture, you may have found yourself shocked. You may have seen terms like “cold-pressed” and “extra virgin” on labels of olive oil, bottled with an elusive degree of certainty on the verification of authenticity.

Olive oil adulteration is a process of mislabeling or misrepresenting its purity, diluting olive oil with oils of lower quality or freshness, or different origins or ripeness. Italy has stringent laws that heavily penalize olive oil fraud, which is why olive oil extracted from Italian groves is so highly sought after. Moreover, the European Commission regulates organic farming through strict policies which mandate that products may only be labeled and “certified as organic by an authorised control agency or body. This means that they have fulfilled strict conditions on how they are produced, transported and stored.”

At our biodynamic farm in Umbria, we extract extra virgin olive oil by the time-honored method of cold-pressing, a delicate process that does not involve heat, in order to maximally preserve flavor, nutrients, and antioxidants. Our centuries-old, mature olive trees grown in nutrient-rich soil produce olive oil with impressively high, medicinal levels in polyphenols, offering an array of health benefits, including lower cholesterol levels, reduced heart disease risk, improved brain health, and more.

Like the aging of fine wine, our ancient olive trees produce a deliciously robust flavor that will turn every dish you drizzle, sauté, or roast with our olive oil into a masterpiece.

My culinary curiosity is what fuels my passionate curation of what I eat, understanding food processing and appreciating its origins. Our EU Certified Organic Ancient Italian Olive Oil is crafted for conscientious food lovers who cherish connections to every facet of intentional living, including the land and local community behind the supply and production.

I invite you to experience the delicious green gold of Umbria as a celebration of the vitality of the Italian way of life. Explore our small-batch, sustainable, and organic products at shop.shaynaskitchen.com and connect with me @shaynas.kitchen.
