For those of you who first discovered me through my travels, you may not know that long before I embarked on my new life chapter in Umbria, Italy, I have always had my little corner of the internet on this blog, Shayna’s Kitchen. As a professional chef, my joy is creating and sharing recipes I’ve developed from scratch: clean, gluten-free, and refined sugar-free versions of your favorite dishes and desserts. From day one, I’ve poured my heart into making this space feel as warm and inviting as my own kitchen at home.

I still have a huge smile on my face from recent cooking segments, where I discussed the benefits of olive oil and showed how I use it as the star ingredient in a cake. In my segment with WKRN Local On 2 in Nashville, we delved into a serious issue reported by Forbes: “80% of olive oils in America are fake” due to olive oil adulteration. This process mislabels or misrepresents the purity of olive oil, often diluting it with lower-quality oils, or mixing together extractions that differ in freshness, origins, or ripeness. 

Given its popularity as a kitchen staple, it’s alarming how often consumers are misled about the purity of what they think they are buying in the USA. Italy has stringent laws that heavily penalize olive oil fraud, which is why olive oil extracted from Italian groves is so highly sought after. The answer is that cold-pressing ensures the quality of the olive oil by keeping the temperature of extraction very low so as to not kill aromatic properties, antioxidants, and nutrients.
